GreedFall has a respec mechanic that allows you to collect all of your skill points. You can use a memory crystal to do this, and it will allow you to rebuild your character in a way that makes you more interested. You can do this as often as you like, but you will need a Memory Crystal each time. Most importantly, Memory Crystals are not the most used item in the game, so you will need to carefully consider your version each time.

If you go to the Character Development tab in the menu, you will see an option to use a memory crystal. You will also be able to see how many memory crystals you have next to this option. Using a memory crystal will refund your skill, attribute, and talent points and allow you to use them again. This will not affect the bonuses you get from armor, or how you get certain bonuses in other ways.
You start the game by getting your first crystal from the weakened boss you fight in Serene, which allows you to revive your character for free if you want. While playing in the game you will come across different bosses and these boss fights can earn you more memory crystals. They cannot be obtained from Merchant or by a means like this, you have to eliminate these powerful enemies to get them.
As such, so it's best to try and create the best possible build and think about which aspects of combat you find most rewarding or effective. I would suggest to always keep a memory crystal, just in case of an emergency, as it is never entirely clear when a new crystal will come your way.
Make sure you explore the areas all the way to try and find these bosses, so that you can accumulate as many Memory Crystals as possible. Such a crystal can be found during the "Forever a Naut" mission you do for Vasco. You will find an optional chef near the wreckage that you need to find.
Interestingly, when using a Memory Crystal, if you decide to choose a completely different class, your starting gear will be replaced with that of that class. So be sure to keep it when you store it.
