These trophies are obtained by completing the different objectives in the levels. Each one has 10 objectives to complete, and 3 difficulty levels each. Most often you will need several attempts to get them all.
As you complete each level you must try to catch all the "alien plushies", to get the Alien as a playable character as quickly as possible. The first game has 9 levels and the second has 10. To unlock the secret level "Skate Heaven" you will have to finish all other levels with 100% completion.

You will have to complete as many challenges as possible to get these trophies, keep in mind that they are different for each level. You will have to find all 50 stat points with at least 3 different skaters, and also finish all of their challenges. Also don't forget to complete the "expert challenges", most of them are speed runs, high scores, etc. To keep track, you can view the list of challenges from the main game screen or the pause menu by selecting the "Challenges" screen.

Medalist
You will have to get a medal in any competition park in the Tours, then you will get this trophy automatically.

This trophy is unlocked after completing 51 objectives in THPS 1, it is the endgame map.

To get this trophy you must find all the Alien Plushies. Tony Hawk Pro Skater 1 + 2 has 19 Alien Plushie locations and hitting all of them will unlock a secret Roswell Alien skater, which you can play with. Each level has 1 alien plushie, that's 19 levels with 19 plushies. You will recognize them because they are small dolls fixed on the map and by passing over them they will be saved immediately, that's the way to get them.
Tourism
To get this trophy you will have to complete all the objectives in THPS1 classic and get all the gold medals.
Back to school...again
This trophy is automatically obtained by unlocking School II in THPS2 Classic.
Four for Four
You will have to win 4 medals in the competition parks.
To the Tail...
This trophy is unlocked as you complete objectives in THPS 2.

You must get hit by a bull in the Bullring to get this trophy, you will have to jump over the barricade and make him hit you to unlock it.
Valhalla
To get this trophy you will have to complete all the objectives in THPS2 classic and get all the gold medals.
Encounter

Beginner of the Year
You will need to get the collection of beginner challenges to get this trophy, just look for them under "Challenges" on the home screen.
Veteran Signs
In this case you will have to get the collection of the Veteran challenges. It's the same method as the previous one, through the home screen you will see the challenges in the 3 levels: Beginner, Veteran, Legendary.
Legendary
It's about getting all the Legend challenges to get the trophy.

You will need to reach race level 10 to get this trophy.

Paint the City
You will have to paint 100 surfaces in Graffiti throughout the entire game time and you will get this trophy.
Doing the Donkey
Give 50 letters in Donkey to get this trophy.
Combo Smash
You will have to execute a combo of over 50,000 points, this is something that can happen naturally while playing the game so you don't have to try hard.
Shoot and Score
You will need to score over 1,000,000 points in any classic park to get it.
Busting your chops
For this one, you'll need to get a score of over 10,000,000 in any classic park.
Total Score
To get this trophy, you will need to score 5,000,000 points in Trick Attack over the entire game time. Do tricks until you get that many points to get it.
In Pieces
You will have to break 20 crystals to get this, it will probably happen naturally as you play the game.
Don't Judge Me
You must achieve a judge score of 99.9 on a competition course to get this trophy. The best way to get it is through a competition, perform a "sick" combo and avoid giving up.
